Remain Coachable

Once we take on the attitude of we have learned it all, or "we know it already", we cease improvement. Listening to everything as if it were "new" allows us to expand our vision. This is key because once we boast about how much we know the arrogance impedes our development.

This has been key for me this week. I have been in my field for many years. I, after listening to many lectures,  realize how much I know. But I went into each session with a specific listening, "this is all new to me." It allowed me to stay alert and pick up on a few key elements. I have learned key ways to improve upon what I am doing. 

I am applying this concept to my weight loss journey. I cannot continue to do the same thing or act like, "oh yea, I've done this already." What helped me loose the first 80 may not help now. Simply because I need to learn new ways of eating, exercise to improve on the overall methods of weight loss. I remain coachable.

Wonderful Wednesday

Hot Sausage Turkey Fritatta

4 servings : 7 points (approx. 350 calories)


3- Jennie-O Hot Sausage Turkey Link (Extra Lean)
4 eggs whites and 2 eggs (mixed in a bowl)
3 cups of spinach (sliced thinly)
2 medium Roma tomatoes (diced)
1 medium white onion (diced)
8 green onions (diced w/ green tips separated)
4 garlic cloves (crushed)
1 bunch of cilantro (diced w/ 4 tbs. separated)
2 Serrano chili peppers (diced)
2 pinches of oregano
pinch of pepper
2 tbs. ranchero cheese (crumbled)
1 tbs. of canola oil 

Cooking Instructions:
1. Turn the oven on to preheat at 350 degrees.

2. Start with oil in the pan and add diced white onions until clear. Add the crushed garlic and hot sausage turkey link and cook through. Add the spinach once it is 1/3 of the size start to add the tomatoes, green onion, cilantro and serrano chili peppers. 

3. Once everything is mixed well add the egg mix. Be sure to to "swish" the pan to cover all areas. Top with oregano, pepper and ranchero cheese. Place the pan in the oven to cook for 15-20 minutes at 350 degrees. 

4. Slice into four pieces. Top the frittata with green onion tips and cilantro for serving.

Lent: The time of year...

...when I gain the most weight.

This is the time of year when I GAIN, GAIN, GAIN. The time of year when I say, "oh my mom only makes this during lent so I must have it." 



NOT THIS YEAR

This year I have a 12-week challenge. This year I am committed more than ever. This year I BELIEVE I can meet GOAL.


THIS YEAR

I am going to engage in only the positive behaviors of my lent traditions. I will volunteer and share myself with others. Do good for others.

THIS YEAR

I am also going to do something I have not done for years during lent. I am giving up something: I am giving up the story that I am meant to be fat. I am giving up my fear associated with being anything other than who I truly am: a happy and loving person full of life.

I am going to meet goal. I am clear my day to day "sacrifices" i.e. behavioral modifications, the hard work-outs, the amount of times I say, "NO", when I'm offered something unhealthy; are all for a greater good.

I am owning my greatness and sharing myself with others. I am going to mentor at risk-teens and live a life of purpose.

To reflecting, sacrificing and doing good for others.

Day 30. Recipe Tuesday.


Today is recipe Tuesday and I'll be cooking Spicy Garlic Lime Chicken but I will not be using any butter like the recipe calls. I will be serving it with a salad of mixed greens (recipe below) and roasted garlic and olive oil couscous . I use the recipe on the box for the couscous but add lightly sauteed zucchini and tomato for a more filling side dish.

Strawberry Mixed Greens Salad and Poppy Seed Dressing.
6 cups fresh mixed greens
1 pint strawberries, hulled and sliced
1/4 cup sliced almonds, toasted
half a small red onion, thinly sliced
poppy seed dressing (recipe below)
Poppy seed Dressing Ingredients:
1/2 cup avocado oil (or any oil, such as olive oil)
3 Tablespoons apple cider vinegar
2 Tbsp. honey
1 Tbsp. poppy seeds

I will add pictures of the meal once I cook tonight.

--------addition----------

1. There is an official name change since when I asked my brother and gf to come back next week they said, "heeey tasty Tuesday instead of Taco Tuesday!" 
2. I need to prep more. For example I need to make sure I have all my ingredients for the chosen recipes. Today an old pantry item or some sad looking strawberries.The strawberry mixed greens salad became the pear and plum mixed greens salad. The lack of poppy seeds made me use a berry vinaigrette. 

Everything else was great including the wine for my guest and the blueberry green iced for me.

Day 27. I miss you.


I've learned a few things in the last 28 hours. 
1. I can easily make healthy choices. 
2. I can just as easily make bad choices.
3. There will be times when the "bad" choices are necessary. It is part of the learning curve. 

Friday night dinner was easy because there were healthy options that fit exactly what I wanted. Green enchiladas in a tomatillo sauce. I missed the cheese, and refried beans. I ate some off of my hubby's plate and took most of his sour cream to top my enchiladas. I ate my cole slaw with lime dressing. At some point the hubby pointed and laughed because I cut the garnish lettuce to have more greens. The agave margarita was a skinny cocktail. But I didn't drink it. I realized I've had to many acid based foods and my stomach was kind of acting up. 

Today was a whole other type of scenario. I had a healthy breakfast. "Linner" not so much. I went for it! I also didn't work out the way I wanted. We walked a total of about 2.5 miles but I calculated it as less of a calorie burn since it was a slow leisure walk. 

THE OUTCOME of bad eating and minimal exercise...I feel sluggish, lazy, and tired. I MISS my clean eating and energizing work outs!!! 

Better yet, I'm ready to start my Sunday back on target because I've learned I feel better when I make healthy choices. To always being able to learn.
